Red wine poached pears

I had a bag of pairs in the fridge and half a bottle of wine left over from the night before... and of course the first thing that comes to my mind is let's start poaching! I am not a wasteful person and i like to try and make something of my food and wine before it needs to go into the bin.

Red wine poached pears happen to be one of my favourite desserts in the winter and even though its summer in Sydney this constant week of rain has made me crave this dish.

Here is the recipe i always use,


4 firm pears (they will take longer to cook, absorbing more wine)

1 cup of sugar

1 cup of red wine

1 cup of water

2 cinnamon stick

thickened cream to serve


1st we need to make our poaching liquid,

add all the ingredients into a saucepan EXCEPT the pears!

stir over medium-high heat until all the sugar has dissolved and the liquid starts to boil

Turn down to a low heat and allow liquid to reduce a little

While the poaching liquid is reducing, peel the pears and take out the core

Carefully lower the pears into the liquid and simmer for 20-30 minutes

don't forget to turn the pears as they cook so they colour evenly

test the pears after 20 minutes with a fork to check if they are tender

Once the pears are ready remove from saucepan

fight the temptation and allow the pears the cool slightly before digging in.

serve with thickened cream and wella!
